Differing from herbs which come from green plant parts, spices have a long history of international trade. They can be used for medicine, religious purposes, cosmetics or perfumery. Culturally and religiously, spices can shape the cuisine of a region. This book explores the history of the spice trade and investigates some of the methods of creating spices.
