Today algae is used by humans in many ways; for example, as fertilizers, soil conditioners and livestock feed. Agar, a gelatinous substance derived from red algae, has a number of commercial uses. Algae is the national food of many nations: China consumes more than 70 species, including fat choy, a cyanobacterium which is considered a vegetable. Carrageenan, from the red alga Chondrus crispus, is used as a stabiliser in milk products. This book studies various domestic and commercial uses of algae including agar plate, algae fuel, porphyra, nori, and laver.

Project Webster represents a new publishing paradigm, allowing disparate content sources to be curated into cohesive, relevant, and informative books. To date, this content has been curated from Wikipedia articles and images under Creative Commons licensing, although as Project Webster continues to increase in scope and dimension, more licensed and public domain content is being added. We believe books such as this represent a new and exciting lexicon in the sharing of human knowledge. Less
