With many cultural influences, Canadian cuisine varies immensely from region to region. While there are many similarities with British and American cuisine, French Canadian cuisine is molded by other cultures. Mexican cuisine is known for its bold, rich and varied flavors and a variety of spices and ingredients, many of which are native to the country. Native Mexican tribes contribute heavily to the colorful tastes of Mexican cuisine. Native American cuisine includes the cuisine of all the indigenous peoples of the Americas. Modern Native Americans retain the traditions of these foods through social gatherings and rituals celebrations. This book celebrates the culinary tastes of Canada, Mexico and the Native American Indians of North America, Mexico and Central America.
