Californian cuisine is influenced by Mexican food combined with regional offerings and a move towards whole and organic foods. Hawaiian cuisine is influenced by the foods of the Filipino, Polynesian, Japanese and others. The cuisine of the Southwestern United States is styled after the rustic cooking of Mexico. Encompassing foods that may have been eaten by Spanish colonial settlers, cowboys, Native Americans, and Mexicans throughout the post-Columbian era, the Southwestern culinary offerings are Mexican in name and originality but authentic and unique in style and presentation. Originating in the 1970's, fusion cuisine is a combination of culinary styles and traditions that combine in creating unique dishes to titillate the palate. This book explores the culinary delights of the Western United States, the Southwestern United States and the cuisine known as Fusion.
